Breakfast Egg Cups

Here’s a palm-sized, protein packed breakfast for you! Baked By Joanna found this egg-cellent idea the other day and I tried it this morning. Eggs and thinly sliced meat  (I used ham and turkey) baked in a muffin pan. Eat alone if you are low-carbbing it, or put it on toast for a ready-to-go breakfast.     Great recipe! I followed the instructions exactly, yet my yolks came out hard. I’m wondering if I should decrease the cooking time or temp or both next time …

      Try decreasing the cooking time and then just keeping a close eye on the fess while they are baking. Each oven cooks slightly different, unfortunately. Let me know how this works!
